दही का चक्का या हंग कर्ड बहुत ही आसानी से घर में बन जाता है यह बहुत ही रेसिपी में काम आता है और बहुत ही स्वादिष्ट और पौष्टिक होता है इसे बनाना बहुत ही आसान है यह हमेशा बेकरी या मार्केट से ही लाते हैं आज हम बताएंगे कि घर में दही का चक्का कैसे बनाते हैं तो चलिए देखते हैं इसकी रेसिपी।

दही का चक्का बनाने के लिए सामग्री Ingredients for making hung curd yogurt 

• दही (curd)
• छलनी strainer)
• कपड़ा (cloth)

चक्का बनाने की विधि (method of making hung curd)

• सबसे पहले दही से चक्का बनाने के लिए हमें ताजे दही की जरूरत होती है ताजे दही से चक्का एकदम फ्रेश बनता है और खट्टा नहीं लगता।
• सबसे पहले एक खाली बर्तन ले उसके ऊपर छलनी रख दें अब इस छलनी के ऊपर एक कपड़ा रखें और इस कपड़े में हमारा दही डाल दें चारों तरफ से पकड़ के कपड़े की पोटली बना दें और इसमें गठान (knot)लगा दे।
• दही का एक्स्ट्रा पानी नीचे वाले बर्तन में इकट्ठा हो जाएगा दही की पोटली को कुछ देर इसी पर रखे रहने दें ताकि इसका एक्स्ट्रा पानी निकल जाए।
• अब दही की पोटली को उठाकर नल पर टांग दें।
• या फिर पूरी रात इसे फ्रिज में रखे रहने दें ताकि इसका पूरा पानी अच्छे से निकल जाए।
• 2 घंटे से ज्यादा अगर इस पोटली को आप बाहर रखते हैं तो हंकर्ड खट्टा हो जाएगा।
• इसलिए आप इससे फ्रिज में रखें।
• पूरी रात फ्रिज में रखने के बाद आप इसे बाहर निकाले।
• दही का चक्का बनकर तैयार है इसे कपड़े से एक बर्तन में निकाल ले और अब इसे किसी भी रेसिपी में उपयोग में लाएं।

सावधानी (precautions)

• दही का सारा पानी अच्छे से निकलने दे उसके बाद ही चक्का उपयोग में लाएं।
• चक्के से निकला हुआ पानी बहुत पौष्टिक होता है आप उसे किसी भी सब्जी बनाने में या आटा गूंथने में या फिर अपने बालों में अप्लाई कर सकते हैं।
